Camping Fish Stir-Fry

Ingredients (1 serving ~850 calories)

10-20g dehydrated Tilapia (about 150-300g fresh)
10g dehydrated zucchini (1/3 medium sized fresh zucchini)
10g dehydrated eggplant (1/2 medium sized fresh eggplant)

10g dehydrated red bell pepper (1/2 fresh, that can't be right, must be closer to 1)
some dehydrated green onion (2 stalks fresh)
1/2 Sunbird Thai Spicy Beef flavour packet (~35mL)
15mL sugar
150mL water
5mL salt
15g peanuts
30mL oil

100g quick cooking noodles (e.g., Somen, Soba, Farkay)

Preparation

Steam Tilapia then separate it into thin pieces onto a clean-a-screen. Dehydrate at 160F until dry (4-6 hours).
Dehydrate vegetables.
Combine 1/2 flavour packet with sugar and salt, then package in a ziploc bag.
Combine vegetables, then ziploc. Keep fish in a separate ziploc bag in case fresh fish is caught instead.

Cooking

Rehydrate fish and vegetables for 30-60 minutes. Drain excess water.
Mix flavour packet with 150mL water and set aside.
Boil 750mL water and add noodles. Cook 2 minutes for Somen noodles, 5 minutes for Farkay.
Add oil to pan and heat. Add fish and vegetables and stir-fry for a minute or two. Add flavour mixture and stir-fry until thick. Add peanuts.
Serve in a bowl on top of noodles.
